I basically chopped squash, aubergine, paprika (bell peppers), red onion and mushroom into bite size pieces. Put them into an oven pan, season with lemon juice, olive oil, salt, pepper and rosemary. Place in the oven, heat 225 C for about 20 minutes. Mean while take your salmon (without bone and skin), season with lemon-pepper and cover with a mixture of feta cheese and Kesella (not quite sure what Kesella is in English, but it’s basically like sour cream but much lighter). When the vegetables have been in the oven for 20 minutes, decrease the heat to 175 C and place the salmon on top of the vegetables. Place in the oven again for about 20-30 minutes. Check that the salmon is whitish in color and that the aubergine is soft. If there is any feta mixture left then place it in a bowl on the side, to add if needed.
If this doesn’t seem like enough food, you can always add potatoes to the vegetable mixture.
Truly recomended! Unfortunately I forgot to take a picture of the food so I can’t show you what the end result looks like, but trust me, it’s worth trying.
