My Andy

My baby has a kinda cool job, he is able to work from pretty muchanywhere - except for meetings and specific jobs.

He pretty much is a problemsolver who works from home, but also makes trips all over Sweden - to make sure things get done and get done well.

This means that most of the time he is home, working during the day or at the (one of the several) office, but at home during the nights. That makes me happy - he's there for my happy and sad times and makes sure that I'm warm and safe.

But sometimes he goes away on business trips and then I feel sad cause he isn't here to hold me... But knowing that he will be home soon and that he misses me as much as I miss him, makes itbearable... Eventhough I get somewhat girly sometimes... lets just keep it at that, no detailsneeded ;-)

Yesterday my baby came home from a weeks businesstrip... I've missed him like crazy, but as soon as he stepped through the door and gave me that "hi-baby-I'm-home-look" I got all warm and fuzzy and I forgot all about him being gone...

That is what he does to me... He makes me forget about everything else and just think about him... And sometimes that sucks, since I kinda forget to call my friends... But since I have the best friends in the world, they always forgive me... But that is just the way it is, the way I feel is hard to explain but I guess it is why we are getting married in less than 3 months...

Chicken Curry

A month and a half ago we spent 1 week in the Swedish Alps. It's one of my finances family traditions and for the last 3 years I have gone with them. It has opened my eyes to one of my new favorite pass times, snow mobiling. Driving around in 100 km/hour with the most amazing landscape whizzing by and holding on tight to the love of my life - that is what I call Life.

This year, unfortunately my 
parents-in-law to be, became ill on a trip to Canada and were unable to come with us to the Alps. (They were ill for about 6 weeks, where by staying in bed for about 4). So therefor we, my finance Andy, his brother Daniel and I went up to the rented cabin and enjoyed ourself to the best of our own ability.

One night for dinner I whipped up a 
Chicken Curry that I thought was really quite good for a first time curry maker. Following a recipe isn't really my thing, so I invented some as I went along. 




Chicken Curry á la Karoleen



  • 2 chicken fillets
  • 1 leek
  • 1 yellow onion
  • 2 1/2 dl half-and-half (ex. matlagningsgrädde)
  • paprika powder
  • cayenne pepper
  • curry powder
  • 1 tomato
  • olive oil to fry with

    Cut the fillets into bite size pieces. Fry these in some olive oil. At the same time, chop the leek and onions, (keep some of the green parts of the leek for decorations) and fry them transparent in some oil.


    Season the onion mix with paprika, cayenne and curry - quite a bit - unsure about the amounts but I tasted my way. Add about 1 dl water or milk and let the onions cook. When the liquid is gone, add the half-and-half and leave to simmer for a couple of minutes.


    Add the chicken when its almost done. Let it simmer till the chicken is done. Add more liquid - such as milk or more half-and-half - if it isn't saucy enough for you, I like sauce but that is me.


    Dice the tomato and sprinkle together with the left over leaks. I served it with oven baked rosemary seasoned potato wedges, but I'm pretty sure that it is just as good with rice or bulgur.

    There is this Danish company, Bloggerwave, who connect blogers and companies who want to market their products via the Internet and blogs. As a blogger you are given "assignments" that you chose to or not to write about.
    Right at this moment they are looking for Swedish blogers (Svenska bloggers). If you do chose the assignment you are given a small amount of money as a thank you. It doesn't matter if you write in English, Danish, Swedish, Norwegien, Italian, French or Spanish and if you have several blogs they may or may not all be approved.

    The amount of assinments you get depends on how many assinments there are and your blog.

    I think its a great idea, cause I don't really mind marketing product that I believe in or might want to use, and since you are able to choose - you don't have to write about anything you do not like.

    Organizer deluxe

    About a month ago it was my 3-year anniversary with my soon to be husband. It's been an amazing time, we pretty much have enjoyed the whole time. He has made me happier, smarter, luckier and just about better in every way and shape. I guess that is why I'm marrying the guy... I'm not really sure what I bought my baby, but I guess it was something he wanted or something he needed. I'm a pretty crappy present buyer when it comes to semi-important gifts. Anyways, this post was supposed to be about my lovely gift and not crap about me. My lovely baby bought me a brown leather organizer, it's absolutely the prettiest thing in the world. It's of the Filofax brand (unsure if it exists outside Sweden, but anyways) and it is extremly soft and beautiful. My hopes are that it is just going to get nicer as time goes buy... you know it'll have more of a vintage feel.

    My baby also got me some accessories to have with the organizer - some pink papers and such. Obviously pink papers are a MUST for a girl like me. I was really bothered about the fact that I actually wanted to buy a pink organizer since I'm totally in love with pink, but it is so much more sofisticated with a classic look. How would it look at an office meeting if I used my pink organizer with pink pens and such. The general impression will probably be that it's childish and yuvenille. Instead using a classy, stylish organizer, the impression will be different. And I guess I'm somewhere in the inbetween stage right now... I want to be classy and sofisticated and officy... but at the same time I just can't give up the PINK. I guess you could say I'm just a PINK-junkie ;). So what do I do... I use pink papers and a pink pen - all the time :) That is what I call being a smart cookie :) Anyway.. Thank you baby... I love my new classy, sofisticated and slightly pink organizer...
